JELLY ROLL

INGREDIENTS:

4 egg whites
4 egg yolks
3/4 cup cake flour
1/4 tsp. salt

3/4 cup fine sugar
1/2 tsp. lemon flavoring
3/4 tsp. baking powder
icing sugar

INSTRUCTIONS:

Beat egg whites stiff but not dry. Beat in sugar gradually and beat until very stiff. Beat egg yolks until thick and fold into whites, add lemon flavoring. Mix and sift flour, baking powder and salt onto egg mixture. Pour batter onto a cookie sheet lined with wax paper and lightly greased. Bake at 400 degrees for 10 min. Sprinkle a clean damp tea towel with icing sugar and turn cake onto the towel. Remove wax paper and roll from the short edge, rolling the towel with the cake. Cool. Unroll the cake, spread with your favorite jam, and roll again, this time without the towel. Cut into slices.

VARIATIONS:

Spread cake with lemon pie filling. For a fast, easy cake, mix an angel food cake mix according to directions and proceed as for jelly roll.
